Chefs’ Dinner for PAWS features David Hall of Joshua’s Catering

David Hall, Chef/Owner of Joshua’s Catering, Jenkintown, joined chefs from more than 40 of the region’s most celebrated dining and catering establishments including Iron Chef Jose Garces (Amada, Tinto, Distritos, Village Whiskey and Garces Trading Company), Martin Hamann (formerly Fountain Restaurant/Philadelphia Four Seasons Hotel now 1862 by Martin Hamann at the Union League of Philadelphia), Guillermo Pernot (Cuba Libra),and Matt Zagorsky (Rouge) to participate in the sixth annual Chefs’ Dinner for The Philadelphia Animal Welfare Society (PAWS). All proceeds benefit PAWS’ lifesaving initiatives, including adoption and foster care programs, spay and neuter surgeries, and low-cost vaccinations.

The PAWS event was held on Monday, June 28th, 2010 at the historic Union League of Philadelphia. The culinary extravaganza featured each chef preparing a four course food and wine pairing tableside for 12 guests in decorated pods.

Chef Hall created his menu around cherries – a fruit in peak season in June and readily available from local farms. Dishes included fresh cherry relish and local goat cheese crostini with wildflower honey drizzle; coriander crusted grass fed lamb chops with sour cherry reduction, sautéed artichokes and Lancaster sweet corn; pan seared jumbo day boat scallop with sour cherry chutney, smoky polenta cake, cherry port sauce and crispy leek; micro greens with cherry vinaigrette topped with roasted figs, walnuts and pecorino shavings; and dark chocolate dipped Weaver’s Orchard cherries with Birchrun Hills blue cheese and multigrain crisp.

Guests at the event included local business owners Michael and Jessica King of King Design in Jenkintown, recent recipients of the Eastern Montgomery County Chamber of Commerce Small Business of the Year Award. Their attendance was funded by another Jenkintown businessperson and resident, real estate agent and consultant Andrew Smith, who contributed a portion of his real estate commission fees to support this event.
